Mango Gosht

Ingredients

Boneless lamb or mutton_600 gms
Yogurt_3/4 cup
Dry mango powder (amchur) 1 tspn
Turmeric powder_ 1 tspn
Oil_4 tblspns
Mustard seeds_ 1 tspn
Curry leaves_8-10
Cloves_4-5
Cinnamon_1 one inch stick
Grated onions_1 cup
Ginger paste_1 tblspn
Coriander powder_1 tblspn
Red chilli powder_ 1 tblspn
Raw mango pieces (without skin)_1/2 cup
Salt_as per taste

Method of Preparation

1_ Clean, wash and cut lamb or mutton into the one inch pieces. Marinate in a mixture of yogurt, amchur and turmeric powder.
2_ Heat oil in a thick-bottomed pan. Add mustard seeds, curry leaves, cloves ans cinnamon. Let mustard seeds crackle. Then add grated onions. Cook until onions are translucent.
3_ Add marinated meat pieces and ginger paste. Cook on high flame, stirring contantly.
4_ Add coriander powder, red chilli powdr and raw mango pieces. Stir and cook for half a minute. Add two cups of water, bring it to boil. Cover the pan and let it simmer till meat pieces are tender.
5_ Season with salt and again cook on a low flame till the gravy thickens.
6_ Serve hot with bread of your choice.

Chef´s Tip: Whole garam masala for this recipe consist of 6 green cardamon, 4 cloves, 2 black cardamon and one 1¨ stick cinnamon.
