Vegetable Kofta

Ingredients

1 large boiled potato, grated
¼ lb. cauliflower, grated
2 medium carrots, grated
½ lb. paneer, grated
2 T. besan
¼ c. silvered almonds
¼ c. raisins
¼ c. cashew, chopped
1 t. garam masala
1 t. anardana
2 T. chopped green cilantro
½ c. boiled onion paste
1 T. ginger & garlic paste
1 t. turmeric powder
1 t. cardamom powder
1 t. cumin powder
½ red chili powder
1 T. tomato puree
16 oz. oil for frying
1 t. fenugreek
Salt to taste
1 T. corn flour (optional)
6 oz. light cream

Method of preparation

1_ Preheat oven 350 degrees F.
2_ Grate the vegetables and the paneer into a bowl and add almonds, raisins, cashews, garam masala, chick pea flour, salt, anardana, and half of the cilantro into the bowl.
