Alu Ghobi

Ingredients

Serves 4
1 lb. cauliflower, cut into 1” florets
1 lb. russet potatoes, peeled and cubed
½ t. chili powder
¼ t. turmeric
2 t. grated ginger root
1/3 c. chopped tomatoes
1 green chili, chopped
Salt to taste
2 T. oil
1 T. yogurt
3 T. chopped cilantro leaves
½ t. garam masala

Method of preparation

1_ Combine the chili powder, turmeric, ginger, tomato, green chili, salt, and yogurt ina small bowl.
2_ Mix well. Grease a saucepan liberally with oil. Put the washed potatoes and cauliflower in the pan and pour the spice and yoghurt mixture over it.
3_ Cover the pan and cook over low heat for about 15 minutes.
4_ Stir in the cilantro leaves and cook, uncovered, until the excess moisture has evaporated and potatoes are cooked.
5_ Sprinkle with garam masala and it is ready to serve.
