Reshami Kabob

Ingredients

Serves 4
Reshami Kabobs are traditionally cooked in a tandoor oven, though with this recipe you can enjoy them at home.
2 lbs. clipped chicken tenders
4 T. margarine
4 t. diced ginger
4 t. chopped garlic
2 t. finely chopped jalapeño peppers
¼ t. blended papaya
4 t. coriander powder
4 t. garam masala
Salt to taste
3 oz. light cream or 3 oz. low-flat yogurt (optional)
2 T. fresh cilantro

Method of preparation

Heat the margarine in a pan. Add the ginger, garlic and jalapeño peppers and sauté until golden-brown. Add papaya coriander powder, salt, and garam masala. Remove from heat and add the cream or yogurt and fresh cilantro. Let the mixture cool and, when cool, rub on chicken tenders. Refrigerate overnight.
In a preheated 350 degrees F. oven, cook the chicken for about 15 minutes. You may also grill them on a charbroiler on skewers until the chicken is cooked through. Serve with greens rolled in a flat bread.
