Chicken Korma

Ingredients

2 lbs. white meat of chicken cut into 1 inch cubes
6 oz. cashews, whole or split
2 t. chopped garlic
2 t. chopped ginger
1 c. yogurt
4 t. garam masala
1 medium onion
4 T. vegetable oil
¾ c. light cream
20 oz. Sanjiv´s Basic Curry
1 t. raisins

Method of preparation

Rub the ginger, and garlic on the chicken. Pour yogurt over the chicken so that it is coated. Add ½ of garam masala and mix everything one more time. Marinate this overnight.
Heat the oil over low heat in a pan. Finely slice the onion and add to oil. Stir the onions without letting the onions brown. Add the chicken and stir for about 5 minutes.
In a blender blend the cashews and the cream until it forms a paste. Add the Basic Curry to the chicken and let it all cook for 10 minutes. Add the raisins, cashews paste and the rest of the garam masala. Bring to a boil. Adjust the seasoning and salt.
