Kadhai Chicken

Ingredients

1 lb. boneless chicken
2 t. coriander seeds
4 whole red chilies
1 T. + 1 t. vegetable oil
2 t. Ginger & Garlic Paste
1 large tomato, chopped
½ c. Sanjiv´s Basic Curry B
1 t. garam masala
Salt to taste
1 large onion, cut into 1” pieces
1 medium green pepper, cut into pieces
Fresh chopped cilantro to garnish

Method of preparation
Cut chicken breast into 1 inch pieces. Crush red chilies and coriander seeds together with a mortar and pestle. Heat 1 T. of oil in a pan or sauce pot. Add Ginger & Garlic Paste and sauté until light brown. Stir in the crushed spices. Add the chopped tomatoes and sauté until tomatoes are tenders. Add the chopped pieces and sauté for about 5 more minutes. Add salt, garam masala and little water to cover chicken pieces. Cover and simmer until chicken is cooked and gravy is thick. In a separate pan, sauté onions and green pepper in 1 t. of oil until tender. Add to chicken with cilantro as garnish.
