Tandoori Hens

Ingredients

2 Cornish hens
Salt to taste
¼ c. ginger & garlic paste
½ c. vinegar
1 ½ c. of yogurt
Red chili powder to taste
1 T. garam masala powder
1 T. kastoori methi
juice of two lemons
1 T. ground papaya
1 T. vegetable oil
2 T. red paprika powder
pinch turmeric powder

Method of preparation

Clean, deskin and cut each hen into four pieces (2 breasts and two legs.) Make slanted ¼” cuts on the breast and legs. Rub the salt, red chili powder, ginger & garlic paste and vinegar on the hens. Place aside. Mix yogurt, salt, red paprika powder, kastoori methi, garam masala, papaya and ginger & garlic paste, the juice of half lemon, turmeric, and oil. Rub this mixture on the hens. Leave the hens in the marinade overnight. Preheat oven to 375 degrees F. Blake the marinated hens for 20 minutes and broil for 3 – 5 minutes on each side.
