Heat oil in a heavy–bottomed pan. Add ginger and sauté
until brown. Add onion chutney, mustard seeds, sesame seeds
and cashews. When browned, add green beans, mush rooms and cauliflower,
sauté 3 to 5 minutes. Add shrimp and 8 curry leaves.
Keep stirring for 5 – 7 minutes. Add enough water to cook
the shrimp. Cover, cook for 2 – 3 minutes. Season with
salt, add the rest of the curry leaves, and stir until the shrimp
is cooked. Serve over rice. |
