Shrimp Curry, South Indian Style

Ingredients

9 jumbo shrimp
2 T. mustard oil
¼” piece of ginger, peeled
2 T. marinated onion chutney
1 t. mustard seeds
1 t. sesame seeds
1 t. cashew pieces
¼ c. chopped green beans
¼ c. chopped mushrooms
¼ c. chopped cauliflower
15 curry leaves
1 cup water
Salt to taste

Method of preparation

Heat oil in a heavy–bottomed pan. Add ginger and sauté until brown. Add onion chutney, mustard seeds, sesame seeds and cashews. When browned, add green beans, mush rooms and cauliflower, sauté 3 to 5 minutes. Add shrimp and 8 curry leaves. Keep stirring for 5 – 7 minutes. Add enough water to cook the shrimp. Cover, cook for 2 – 3 minutes. Season with salt, add the rest of the curry leaves, and stir until the shrimp is cooked. Serve over rice.
