Khasta Kachori

Ingredients

Refined flour_2 cups
Salt_as per taste
Soda bi-carbonate (baking soda)_1/4 tspn
Oil_2 tblspns + to fry
Water_1/2 cup
Ginger_1 one inch piece
Green chillies_2-3
Split black gram (urad dal) 1/3 cup
Asafoetida_a pinch
Coriander powder_1 tspn
Cumin powder_1/4 tspn
Red chilli powder_1/2 tspn
Fennel powder_1/4 tspn
Sugar_1/2 tspn
Salt_as per taste
Ghee_4 tblspns

Method of Preparation

1_ Sieve the flour, salt and soda bi-carbonate together. Add two tblspns of ghee and rub betwen your palms to get bread crumb texture.
2_Knead into a soft dough with water. Cover with a moist cloth and set aside.
3_Finely chop ginger and green chillies.
4_Soak the urad dal for an hour. Then coarsely grind using little water.
5_ Heat oil in a kadai. Add chopped ginger, cjopped green chillies, asafoetida and all the pwdered masalas. Stir well and add ground dal. Cook till all the moisture is almost drid up.
6_ Add sugar and salt and mix well. Remove off the flame. Let the mixture cool.
7_ Make twelve balls of the flour dough. Flatten each ball between your palms so that they are thinner around the edges and thicker in the centre.
8_ Place a little stiffing in the centre and bring the edges together to form a ball.
9_ Heat oil in a kadai. Fry kachoris on a slow flame till goldn brown and crisp.
10_ Serve with tamarind chutney.
